Red Rice

Red Rice

Product Overview

Thai Red Rice, traded internationally as red cargo rice, is an unpolished long-grain rice whose bran layer carries natural red-brown proanthocyanidin pigments. Only the inedible husk is removed, so the fibre, minerals and antioxidant compounds concentrated in the bran remain on the grain. It cooks firmer and chewier than both white and standard brown rice and carries a strong nutty flavour that holds up well in salads, grain bowls and blended wholegrain products. Demand is driven by the health and wellness category in Europe, North America and Australia, where red rice is positioned alongside quinoa and other wholegrains, and by traditional consumption across Asia. As with all unpolished rice, the retained bran oils shorten shelf life relative to milled white rice, so current-crop supply matters.

Grain Description

Long grains with an intact red-brown bran layer. Cooks firm, chewy and separate with a pronounced nutty flavour, and holds its texture well when cooled.

Frequently Asked Questions — Red Rice

What is the difference between red rice and brown rice?
Both are unpolished, so both retain the bran. The difference is the pigment in that bran: red rice carries red-brown proanthocyanidins, brown rice does not. In practice red rice cooks firmer and chewier, has a stronger nutty flavour and holds its shape better in salads and chilled products.
Is Thai red rice the same as red cargo rice?
Yes. Cargo rice is the trade term for rice with only the husk removed and the bran intact, so Thai red rice is commonly sold internationally as Thai red cargo rice. Both names describe the same product.
How is it cooked?
It needs more water and longer cooking than white rice — typically 35 to 45 minutes — and benefits from a 30 minute soak beforehand. The intact bran slows water absorption, which is also why the cooked grain stays firm and separate.
What is the shelf life?
We recommend 9 to 12 months from milling, stored below 25C in dry conditions. The natural oils in the retained bran can oxidise over time, so we ship current-crop stock and can align milling to your shipping schedule.
