Product Overview

Brown Glutinous Rice is Thai sticky rice hulled but left unpolished, so the bran layer stays on the grain. It cooks to the same cohesive, chewy texture that defines glutinous rice, but with more fibre, a firmer bite and a distinctly nutty flavour. Like all glutinous rice it is naturally gluten free despite the name — glutinous refers to the glue-like texture produced by its near-total amylopectin starch content, not to gluten. It is used across traditional Southeast Asian cooking and is increasingly specified by health-oriented food manufacturers in Japan, Korea and Western markets for wholegrain sticky rice products, porridges and desserts. Brown glutinous rice requires longer soaking and steaming than white glutinous rice, typically an overnight soak before cooking.

Is brown glutinous rice gluten free?
Yes. All glutinous rice is naturally gluten free. The word glutinous describes the sticky, glue-like texture created by its very high amylopectin starch content, and has nothing to do with gluten, which rice does not contain.
How is it cooked?
Soak before cooking — brown glutinous rice needs a longer soak than white glutinous rice, usually 6 to 8 hours or overnight, because the bran layer slows water absorption. It is then steamed rather than boiled, typically 30 to 45 minutes, which produces the characteristic cohesive texture.
How does it differ from white glutinous rice?
The grain is the same; the milling is not. White glutinous rice is polished, brown glutinous rice retains the bran. Brown has more fibre, a firmer and chewier texture, a nutty flavour, a longer soak and cook time, and a shorter shelf life because of the natural oils in the bran.
What container quantity applies?
