Broken Glutinous Rice consists of the fragmented kernels separated during the milling and grading of Thai sticky rice. The grain is chemically identical to whole glutinous rice — the same near-total amylopectin starch content — so where a process destroys grain shape anyway, the broken grade delivers the same functional result at a materially lower cost. That makes it the standard input for glutinous rice flour milling, for rice wine and fermentation stock such as sake and traditional Asian rice wines, and for snack extrusion, confectionery and industrial starch applications. It is graded by fragment size, and buyers should specify the grade their process requires, since flour milling, brewing and extrusion each favour different fractions.

Is broken glutinous rice lower quality?
It is a different grade, not a lower-quality grain. The kernels are fragments produced during milling, but the starch composition is identical to whole glutinous rice. For any process that mills, ferments or extrudes the grain, the fragment shape is irrelevant to the result, so the broken grade is the cost-efficient choice.
What fragment sizes are available?
We grade by fraction and can supply to your process specification. Flour milling, brewing and extrusion favour different fractions, so tell us the application and we will match the grade rather than sending a general-purpose lot.
Can it be used for making mochi or flour?
Yes — glutinous rice flour milling is its single largest use. Because the grain is ground, starting from broken kernels gives the same flour at a lower input cost than milling whole grain.
Is private label packaging available?
